I am not a fan of the typical store bought pumpkin spice coffee – but I have created a pumpkin blended coffee that I do enjoy! At times, the “pumpkin spice” essence in coffee leaves a bit of a chemical after taste (to me at least) so I blend my coffee with real pumpkin, brown sugar and cinnamon for a sweet, creamy pumpkin treat.
I am terrible at providing accurate measurements for this recipe (it was an “eyeballing it’ creation), so please use it as an inspiration for creating your own unique blended pumpkin coffee and adjust to your liking! Read more below to see how I make mine:
First, I added a brewed cup of coffee from my Keurig (about 10 oz). You can use decaf if you do not want to be heavily caffeinated which tastes just as good.
I also added a a big heaping tablespoon of canned pumpkin puree (and by that I mean a large kitchen tablespoon!).
I also added in about teaspoon of cinnamon, a tablespoon of brown sugar and then some splashes of almond milk to taste (you can also use pumpkin spice creamer, cream, regular milk, coconut milk – the choice is yours!).
Add in a handful of ice cubes and then BLEND! It might take a couple of attempts to get the right ratio of pumpkin, sweetness and spice, so I am always tasting as I blend and add things.
